6-8 Potatoes
Sesame Cooking-Oil
5 Cloves of Garlic

This dish pairs well with Loaf and fresh, finely chopped Parsley.
(Optionally, cover the dish with Parsley spice, to mix up the seasoning a bit, if you want)

How To
Peel the Garlic-Cloves, before rinsing them clean and finely chopping them.
Rinse the Potatoes, before cutting them into medallions (medium-thin, round pieces)

Set your oven to 175 Celsius/347 Fahrenheit temperature.

Get an oven-bowl, coat it's bottom and sides in Sesame Cooking-Oil.

Make a mixture of Sesame Cooking-Oil and Salt.
Use it to coat the Potato medallions on both sides.

Mix all the Potatoes and finely chopped Garlic in the cooking-bowl.
Pour a little bit of Sesame-Cooking Oil evenly over the dish,
if you want it extra mouthwatering and savoury.

And once the oven reaches the set temperature, place the bowl in the middle of the oven.
Let it bake for 30-40 minutes or more.
(Check now and then if the potatoes are baked all the way through)

and VOILA!

3-4 Potatoes
4 Carrots
1 clove of Garlic

This is an amount that I would make for a dinner for 2 people, second helpings and all.
For more dinner-guests;
You should probably double up and/or calculate how much of each ingredient you'll need :)

This dish pairs perfectly with My Red Wine Sauce Recipe,
for a Grand Holiday Dinner. ^^

How To
Peel potatoes and carrots, the rinse clean,
before cutting them into medallions(medium thick, round slices)
Peel the clove of garlic, rinse clean and finely chop.

Set your oven to 200 Celsius/ 392 Fahrenheit.

Using an oven-bowl
(one of those bowls made of porcelain/glass/metal, that are made especially to cook/bake things in the oven, and able to withstand the process)
Add potatoes, carrots and garlic,
and pour water in the bowl until all of the ingredients are covered in water.
Then sprinkle some pepper and some salt evenly all over the dish.
(ca. 1 tablespoon of each)

When the oven has reached the set temperature, put the dish in the middle of the oven.
Let it bake for 30 minutes or more
(check now and then, if the vegetables are properly cooked all the way through)

Optionally, let the dish slow-bake over a days time,
at a lower temperature, to let the vegetables soak up those yummy flavours to the max ^^

and VOILA! ^^

3/4 of a Bottle of Wine
2 Shallot Onions
1 Teaspoon Vegetable Bouillon-Powder

(I used a Bottle of Alcohol-Free L-Cabernet Sauvignon from Leitz winemakers)

I've been a MAJOR Red Wine Sauce SUPERFAN,
from the instant I introduced my taste-buds to it.
And now being a Vegan,
I've been hoping I'd be able the re-create the same AMAZING flavour
that made me fall in love with it,
fearing the lack of meat-pour off would be the nail in the coffin to finding those flavours.

I was wrong! :D

This red wine sauce is so delish,
it's actually BETTER than any I've ever had as a non-vegan! :D

It's a Perfect pair with my Holiday Vegetables Recipe.
Hope you'll love it, just as much as I do! ^^

How To
Peel the outer-layer off the Shallots.
Then rinse them, before cutting them into medium bits; not finely-chopped, nor rough big chunks.

Pour the wine into a casserole, add the Shallots.
Heat up at a medium temperature for 5 minutes.
(at 2 minutes, add the Bouillon-Powder)
Then boil (small, occasional bubbles) at top temperature, while stirring for ca. 5 minutes.

and VOILA! ^^
a BEAUTIFUL Red Wine Sauce, Your taste-buds will ADORE You for! ^^

Soy-Milk (3-4 dl/ 1,26-1,69 cup)
1 and 1/2 Tablespoon Sugar
1 Tablespoon Cocoa-Powder
Chocolate Pieces of Your Choosing

I've not been feeling so great this week, and my Mom made me my first EVER
Vegan Cup of Hot Chocolate.

It was a bit bland at first, and wasn't really overwhelming enough in it's Chocolate-flavour,
so I decided to EXPERIMENT; and drop a couple of pieces of Chocolate in the Warm concoction. And It Turned out SOOO YUMMY! :D
No less yummy than any non-vegan hot chocolate! ^^

This is how to make this magical little pick me up;
Add Cocoa-Powder, Sugar and Soy-Milk in a casserole. Heat it up.
Stir while heating. Once boiled to bubbles, take it off the stove, and pour in a cup.
Then add 3-4 pieces of chocolate, and let it melt in the hot chocolate.
Stir together.

And VOILA! ^^

The reason I've named this drink Lumpy Space Princess Hot Chocolate is because of the lumpy consistency that happens when the chocolate melts.
I like using a drinking-straw, and sipping it, encountering little chunks of chocolate as I go.
LUMPY Space Princess-FABULOUS! ^^

8 Potatoes

I've always been a huge lover of potatoes, and especially the Christmas-kind.
This recipe is a personal favourite and original of mine,
I hope you'll love it just as much as I do! ^^

They pair perfectly with slices of loaf;
I like using the potatoes as a paste on top of the loaf,
or coating the loaf in the remaining sesame-oil in the pan.
Unbelievably Yummy! ^^

It's perfect as a side-dish, and it can stand it's own ground as a main-dish or snack.

How To
Rinse the potatoes clean.
Then cut the potatoes into thin medallions.
(like potato-chips in size/shape, but a little bit thicker)

Set your oven to 175 Celsius/347 Fahrenheit.

Take a cooking-plate
(bowl or plate made of glass or porcelain, that is designed to withstand baking things in oven)
Lace it in a layer of Sesame-Cooking-Oil,
both bottom and sides, to prevent burning.

Take a bowl, pour some Sesame-Cooking-Oil in it, and add some salt.
Use this concoction to coat each potato-slice individually, before placing them on the cooking-plate.
Place all of the slices on the plate, covering it fully, and stacking them on top of each other.

Top the dish with large quantities of Parsley-Spice, covering the slices.

Once the oven has heated up to it's set temperature:
Place a baking-sheet on your metal oven-plate, then place the cooking-plate in the middle of the oven-plate; and place the oven-plate in the middle of the oven.
Let it bake for 20-30 minutes, or more, check on it from time to time,
to make sure they've cooked all the way through.

and VOILA! ^^
