VEGANUARY | Week Five Meals

Week Five Meals

Last week of VEGANUARY was plagued illness,
me getting overly OBSESSED with crap reality tv-shows, to pass the time;
and then forcing my sweet boyfriend to read through my "wow, you're way too into this show"
play-by-play of each crappy episodeπŸ˜‚

My momma, the saint that she is, took off work today; to take care of my sick self. πŸ’“
In the evening, when I was finally up for some more heavy duty, dinner'y food;
she made me Tomato Soup, from, scratch! 😊

The wonderful recipe mentioned above, feeds many meals,
and was still the the day afterπŸ’“

Still sick, and not up to doing long prep-stints in the kitchen;
I decided to try my hand at that smashing Tomato Soup recipe.
Turns out, momma did it better.
How did she do it???

(to be fair, I did overboil mine, so that MIGHT be the killer πŸ˜‚)
But I'm sure all the lovin' she put into it, had something to do with it too.πŸ’“

VEGANUARY | Week Four Meals

Week Four Meals

Another day, another Pesto Toast... or five. πŸ˜†
I'll have to confess that I'm really bad at feeding myself actual dinner, when I don't have company.πŸ˜‡

Today, my boyfriend made me the most delicious noodle-wok.
With carrots, broccoli, brown and white mushrooms, squash, garlic, and gingerroot.
Seasoned with salt, pepper, sriracha, and soy sauce.
So many mushrooms, so mouthwatering!πŸ˜‹

Today I decided to experiment with Anthony Mullally's Red Thai Curry recipe,
from the official Veganuary Celebrity Cookbook.
Instead of red curry-paste, I wanted to see what the dish would taste like with green curry-paste.
Boyfriend loved it πŸ’“

Lucky me, I got sick today. Yaaay *sarcasm* 😞
I stayed all day in bed. Ate like a scavenger, with whatever I could snack on; nuts, pesto toast, potato chips; literally the only source of nourishment today.πŸ˜†

My mom made me dinner today.
Veganburger, peas and chips.πŸ’“

A friend and I (Judge Judy would be so proud, I use the correct term xD)
had a snoozearoo at my place tonight.
So I decided to make my Kebab Recipe! ^^
It was a hit!πŸ˜ƒ
"The Other Guys", Kebab and Snacks = Epic Snoozearoo Material!😁
(just to be clear, I'm talking sleepovers; but snoozearoo sounds WAY more fun! ^^)

What do you eat, when you're vegan and sick with a throat infection?
(been sick since Thursday; and whilst I thought it was time to call it quits on the whole thing, the sickness disagreed and decided it was time to take it up a notch... or ten.😱)
An ER-visit later; fruity baby-food, chocolate-dessert, and Pepsi are my now my newly appointed BFF's until further notice.

Also drugs; prescribed, morphineated, wonderous drugs 😌.

VEGANUARY | Week Three Meals

Week Three Meals

Another week of Vegan deliciousness in my lifeπŸ’“
Have you signed up for VEGANUARY?
(and gotten the FREE COOKBOOK?πŸ˜€)

Today was such a delight;
my mom came home for dinner, and I got to cook for her. ^^
I made my own take on a Seekh Spiced Kebab;
paired with fried coriander, chili, gingerroot, garlic, turmeric, and cumin spiced rice and veggies.
I've fallen in love with a new brand of Vegan Filets, that are tha bomb in recipes like this;

Today, my boyfriend and I, decided to get cracking
on another recipe from the Official Veganuary Celebrity Cookbook;
Thai Red Curry
by football-player Anthony Mullally.
It was very yummy.
Not spicy, and just the right amount of flavour.

Leftover Bonanza! :D
Yesterday's recipe was big enough in amount, that it lasted for two dinners,
over two days, for two grown people.

Typical lazy day. Too tired to cook = Pesto Toast, times every meal of the day xD
Which is okay by me.
I LOVE me my Pesto Toast and Orange Juice Dream-Team! ^^

Tonight, I went to a birthday party.
Before I started drinking, my boyfriend made us a Brother's Green inspired curry.
It's something he makes often; it's easy, quick, and mouthwateringly savoury.
(yes, I am hella' aware how lucky I am to have a boyfriend who cooks me amazing food ^^ πŸ’“)

Saturday & Sunday
The weekend is often a time of involuntary rest for me.
Whether I want to or not, I need to recuperate after the week, often in nap-form.
(and when I say naps, I mean alarmingly long regular snoozes, and midday siestas for no reason xD)
I often plan on making all kinds of elaborate, amazeballs meals for me, my family, and friends on weekends; Only to be harshly reminded of having zero energy after a busy week.
Typical huh?

I feel like this week has been a little disappointing variety meal-wise.
Sorry about that. Hope it was still a compelling read.πŸ’“
For the upcoming week, I want to make more versatile meals that I haven't tried before.

VEGANUARY | Week Two Meals

Week Two Meals

Today I did another Chinese style wok.
Although the picture if from another day, of the same dish; as I forgot to take one x)

Today, my Boyfriend and I, decided to try out another Official Veganuary Celebrity Cookbook recipe;
Lebanese Tabbouleh.
It was quite the flavour-bomb.
This recipe was thumbed up, in the cookbook, by actor Joaquin Phoenix.

and since Tabbouleh, on it's lonesome, is more a snack;
we also made a mouthwatering Indian Curry around dinnertime ^^
Which we coupled with watching the movie "The Darjeeling Limited" <3

Leftovers and Pesto covered Toast day.

My wonderful boyfriend made me the best fried rice I have ever tasted! <3
Like, restaurant quality. Blew my mind.
Cherry tomatoes, green peppers, broccoli, and a shit ton of mushrooms, paired with spiced up rice.

I ran out of veggies, and groceries overall today, so pesto toast was a lifesaver.

Today was a leftover-day.
The curry-sauce my boyfriend made on Thursday, some Vegan "Meat"-balls and rice,
made my tummy feel full and nice.
(it was actually hella bland, but what can you do;
we were still out of almost everything grocery-wise xD)

Today my mom decided to make something we Norwegians like to call
Pytt i Panne = "Put it in a pan"
Which is basically just whatever you have on hand, fried together in a pan.
Perfect for doing some magic with leftovers.
Potatoes fried with onions.
(Yes, my breath stinks so bad xD)

VEGANUARY | Week One Meals

Week One Meals

As it was just New Years Eve;
leftovers were on the menu.
You won't see me complaining though.
Oven-baked garlic carrots, broccoli, potatoes, and mushrooms,
paired with kohlrabi-/potato-mash and red wine sauce
was still the a day later ^^

I opted to do a Chinese style wok
filled with carrots, broccoli, squash, shallots, garlic, and gingerroot.
Courtesy of my childhood bowl here, that I've had for 25 years, and still going strong! ^^

I didn't make dinner today.
In an attempt to get my sleep-rhythm back into reasonable hours after the holidays;
Wednesday was spent sleeping myself back on track
(after a failed attempt at skipping a night's sleep to achieve the wanted results xD )

My Boyfriend used to work as a chef, and is therefore a very good cook.
(yup, I am fully aware how lucky I am ^^)
He taught me a BOMB noodle-wok recipe, that takes a matter of minutes, fills the tummy, and leaves my tastebuds mouth-wateringly satisfied.
My favourite veggies in woks are carrots, broccoli, squash, and mushrooms;
and this recipe's got them all! ^^

My boyfriend came home after the holidays today,
to manage much in the cooking department xD

I tried out one of the Official Veganuary Recipes,
that I got in the Digital Celebrity Cookbook when signing up;
The Potato and Spinach Curry, by none other than world famous cricketer Jason Gillespie!
It was quite good; much milder than I had anticipated; with it having 1 whole red pepper in it.
Very mild actually; hardly spicy at all.
Would recommend! ^^

I decided to get creative, and make up a recipe in my mind;
with vegan filets, I made Kebab-"meat"
pairing it with fried, spiced brown rice. (also salad).
It turned out so good, I can't wait to repeat it! ^^

So far, Veganuary is off to a great start!
Even though I'm already vegan, the fact that I have to insta the food for good food-pics;
it makes me waay more likely to try out new and exciting recipes! xD

This January, there's a really cool thing happening.
For Vegans, Vegetarians, and Meat/Dairy Eaters alike!

There's a charity called Veganuary
that is hosting a fun challenge, to try out vegan food for the month of January.
When you sign up, you'll get a digital copy, of the 32 page Celebrity Vegan Cookbook, to inspire you.

It's totally free to join the challenge.
You do so by taking the pledge.

What is the pledge?
When you take the pledge, you make a symbolic commitment that you will try your best to lessen animal-suffering, by trying out vegan alternatives during the month of January.
PLEDGE might sound more daunting than it is.
You just plot in your email, and info about what you usually eat, and why you're taking the pledge, and you're all set.

You can choose to give feedback on how your experience of Veganuary is going;
(which I totally chose, sounds like so much fun; I'm a note-keeping-oholic xD)
But it's totally up to you.

My boyfriend skeptically worried taking the pledge would be
"a big ordeal"
(it wasn't xD)
and is living vicariously, and access to the fab digital cookbook through me.

I can assure you, it's not a big ordeal, but if taking the pledge is not for you
and if you don't have someone to mooch the cookbook off of;
The charity's website has ALL the info you need to try vegan this January;
