VEGANUARY | Week One Meals

Week One Meals

Monday
As it was just New Years Eve;
leftovers were on the menu.
You won't see me complaining though.
Oven-baked garlic carrots, broccoli, potatoes, and mushrooms,
paired with kohlrabi-/potato-mash and red wine sauce
was still the bomb.com a day later ^^

Tuesday
I opted to do a Chinese style wok
filled with carrots, broccoli, squash, shallots, garlic, and gingerroot.
Courtesy of my childhood bowl here, that I've had for 25 years, and still going strong! ^^

Wednesday
I didn't make dinner today.
In an attempt to get my sleep-rhythm back into reasonable hours after the holidays;
Wednesday was spent sleeping myself back on track
(after a failed attempt at skipping a night's sleep to achieve the wanted results xD )

Thursday
My Boyfriend used to work as a chef, and is therefore a very good cook.
(yup, I am fully aware how lucky I am ^^)
He taught me a BOMB noodle-wok recipe, that takes a matter of minutes, fills the tummy, and leaves my tastebuds mouth-wateringly satisfied.
My favourite veggies in woks are carrots, broccoli, squash, and mushrooms;
and this recipe's got them all! ^^

Friday
My boyfriend came home after the holidays today,
and I was WAAAY TOO EXCITED
to manage much in the cooking department xD

Saturday
I tried out one of the Official Veganuary Recipes,
that I got in the Digital Celebrity Cookbook when signing up;
The Potato and Spinach Curry, by none other than world famous cricketer Jason Gillespie!
It was quite good; much milder than I had anticipated; with it having 1 whole red pepper in it.
Very mild actually; hardly spicy at all.
Would recommend! ^^

Sunday
I decided to get creative, and make up a recipe in my mind;
with vegan filets, I made Kebab-"meat"
pairing it with fried, spiced brown rice. (also salad).
It turned out so good, I can't wait to repeat it! ^^

So far, Veganuary is off to a great start!
Even though I'm already vegan, the fact that I have to insta the food for good food-pics;
it makes me waay more likely to try out new and exciting recipes! xD
